Third International Canteen Championship
The third year of the International Canteen Championship was held for the first time in the Food Pavilion of the Czech University of Life Sciences with the participation of five teams. They had to prepare a full two-course menu in the spirit of the motto "Our Countryside" in the composition of starter/main course or main course/dessert. The mandatory ingredients were:
- pork, potatoes, honey and yoghurt.
For the main course, one type of sauce/dip and two types of side dishes in different textures were expected.
The ingredients were evaluated for creativity and complexity of the processing of the ingredients, flavour combinations throughout the menu, composition of each course, use of seasonal (local) ingredients, efficient processing, minimisation of waste in the spirit of zero-waste, realistic portion calculations and compliance with HACCP standards.
